Best Salmon and Potato Skillet Recipe

We like a hands-off dinner, and that Salmon and Potato skillet is just that. In just 45 minutes, you’ll have an easy, delicious, and filling meal that can be personalized every time you make it.

This simple meat and potato combo was inspired by my grandfather’s favorite dish of canned salmon and Russian potatoes fried in a huge cast iron skillet. To give it my personal touch, I opted for fresh salmon fillet with skin on instead of canned and waxy potato mix instead of starchy fruit bats. The good news is that a cast iron skillet is still the perfect cooking vessel. Heating a large cast iron skillet in the oven as it preheats provides a searing surface to crisp the potatoes before adding the salmon. While the potatoes cook, the salmon takes a quick dip in an easy marinade that doubles as cooking fat. Salmon and potatoes are enough on their own, but if you need greens, pair them with an easy salad or exchange half the potatoes for Brussels sprouts.

Store leftovers in the fridge in an airtight container for up to 3 days.
