Ina Garten’s guacamole recipe comes straight from the original “Barefoot Contessa” cookbook
When Garten published his first cookbook — The Barefoot Countess – in 1999, she included an easy but delicious recipe for a Cinco de Mayo party staple: guacamole.
The only ingredients you will need are ripe Haas avocados, freshly squeezed lemon juice, Tabasco sauce, red onion, garlic clove, kosher salt, freshly ground black pepper and a tomato medium (seeded and diced). Don’t forget the tortilla chips for dipping.
“Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl,” the recipe says. “Immediately add the lemon juice, Tabasco, onion, garlic, salt and pepper and mix well. Using a sharp knife, cut the avocados into the bowl until soft. ‘they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.
With fries and guac, serve one of the Garten’s Pink Grapefruit Margaritas. This cocktail is so refreshing and delicious that you will probably have more than one. If you prefer a little sweet and hot in your party drink, the Barefoot Contessa also has a recipe for a Jalapeño Margarita.
Try Ina Garten’s Tequila Lime Chicken or Roast Salmon Tacos as a party main
Garten offers two Tex-Mex recipes that are perfect for a Cinco de Mayo party – or you can serve both! The Food Network star Roasted Salmon Tacos Ditch the traditional tacos made with cheese and sour cream and instead offer rich salmon for crispy and tangy homemade coleslaw and spicy avocado. This five-star recipe is easy to follow and the results will wow your guests.
The Barefoot Countess Chicken Tequila Lime is also an easy recipe, but be prepared to marinate the chicken overnight.
For this dish you will need golden tequila, freshly squeezed lime juice, freshly squeezed orange juice, chili powder, chopped fresh jalapeno pepper, chopped fresh garlic, kosher salt, pepper freshly ground black and boneless chicken breasts.
To add incredible flavor to your Cinco de Mayo holiday meal, serve Garten’s Corn and Avocado Fiesta Salad. The key ingredient in this dish is corn. As one reviewer noted, “the better the corn, the better the flavor.”
